About the Job:
An opportunity has arisen for a Junior Sous Chef to join the The Palmery (Buffet) in Jumeirah Al Naseem. The main duties and responsibilities of this role:
- Assist the Sous Chef or Chef de Cuisine to set standards and maintain them to the Madinat Jumeirah Standard.
- Ensure the smooth operation of the department by optimising the use of materials and manpower, thereby maximising revenue and guest satisfaction.
- Coordinate and execute training of the kitchen colleagues, be able to motivate, and cook any food on a daily basis according to business requirements.
- In conjunction with the Chef de Cuisine/Sous Chef establish job methods and supervise on a regular basis and correct if necessary, cooking standards to maintain a high quality of food and service.
- Assist the Chef de cuisine/Sous Chef in planning menus and recipes and test samples in conjunction with the Executive Chef/Executive Sous Chef.
- Plan rosters on a 1 weekly basis and to review on a daily basis with the Chef de cuisine/Sous chef overtime, rosters, holiday requirements and absenteeism.
- Liaise with the Chief steward in order to ensure high standards of cleanliness are maintained in all areas of the kitchen.
About You:
The ideal candidate for this position will have the following experience and qualifications:
- Previous experience in a similar role (at least 2–3 years) within a high-volume buffet or all-day dining environment.
- Fluent in English and an additional international language is a plus.
- Experience in both front-line cooking and back-of-house operations sous chef duties.
- Experience in menu planning and recipe development specific to buffet-style dining (ensuring variety, nutritional balance, and consistency).
